Teeth grinding while riding

I don't have my own horse but regularly ride a 7 (maybe 8) year old Thoroughbred gelding (ex racehorse). We've been thinking about planting blue bonnets on our ranch. In our researching we have read in one article that said they are poisonous to horses and cattle and in another article it said horses and cattle will not eat blue bonnets.
